Donburi (丼,translated to"bowl”)is a popular Japanese rice bowl dish usually made with seasoned meat or fish and vegetables served over rice.

Our Chicken Teriyaki Donburi recipe combines tender and juicy chicken thighs with Teriyaki sauce, fluffy sushi rice and perfectly seasoned garlic, ginger and chilli veggies.

At 347 kcals with 23g protein and only 9g fat per serving this quick and easy recipe is ideal when you’re short for time but still want a healthy and wholesome dinner.

And if you’re lucky enough to have leftovers, this one will make a great lunch too!

Ingredients (Serves 2)

  • 4 chicken thighs
  • 4 tbsp teriyaki sauce
  • 150g sushi rice
  • 2 garlic cloves, crushed
  • 1-inch ginger, finely grated
  • 40g pak choi
  • 1 carrot, grated
  • 1 spring onion, sliced
  • 1 tsp sesame seeds
  • 1 red chilli, sliced
  • ½ lime
  • Low calorie oil spray
  • Pinch of salt

Method

  1. Start by placing the sushi rice into a sieve and rinse with cold water.
  2. Place the rice into a pan with 200ml of cold water and a pinch of salt and bring to a boil.
  3. Once it is bubbling reduce the heat and keep covered for 15 minutes.
  4. Take off the heat and leave to stand for 5-10 minutes with the lid on then stir.
  5. While the rice is cooking, heat a frying pan with some low-calorie oil spray and brown the chicken thighs all over.
  6. Top the chicken thighs with teriyaki sauce and cook for a further 2-3 minutes each side, until the chicken is cooked through.
  7. Placethe chicken in a bowl to rest while you cook the vegetables, cover to keep warm.
  8. Add garlic, ginger and half of the red chilli to a clean pan with a few more sprays of low-calorie oil and fry for 3 minutes until fragrant.
  9. Add pak choi and stir fry for a further 2 minutes.
  10. Add rice, chicken, grated carrot,pak choi and any extra sauce to a bowl.
  11. Top with sesame seeds, red chilli and spring onion to serve and squeeze over the juice from the lime.
