Banana Baked Oat Bars Recipe

This Banana Baked Oat Bar recipe is perfect for anyone looking for all the joy of a sweet treat, but without the high levels of fat and sugar.

Made from oats, naturally sweetened with bananas, and packed with protein from peanut butter and protein powder, they make for a nutritious breakfast or post-workout snack.

Simple to put together with minimal ingredients, these bars are ideal for meal prepping and keeping with you while you’re on the go, keeping you fuelled throughout the day.

INGREDIENTS:

To make the Banana Baked Oat Bars you will need:

Wet:

  • 2 ripe bananas, mashed

  • 125g smooth peanut butter

  • 125ml maple syrup

  • 2 tbsp coconut oil

  • ½ tsp vanilla essence

Dry:

  • 180g oats

  • 20g vanilla protein powder

  • 80g dark chocolate chips

  • Pinch of salt

METHOD:

  1. Preheat oven to 180c and line an 8x8 brownie tin with baking paper.

  2. Mix all the wet ingredients together until you get a smooth consistency.

  3. Add dry ingredients and mix well until combined.

  4. Add to baking tin and spread out evenly. Bake in the oven for 25-30 minutes.

  5. Remove from the oven and leave to cool in the tray for 30 minutes.

  6. Slice into 12 bars or 16 bite sized chunks for on the move.

Food prep tip – store in an airtight container for 7 days. Reheat to get that freshly baked feel or eat on the go cold.

Top tip - Lovely served with a dollop of Greek yoghurt for a protein boost.
