Breakfast Burritos Recipe
Breakfast burritos are quick and simple to prepare, and this lean twist on the classic ensures you’ll stay on track with your daily protein goals while keeping you satisfied and energised all morning long!

INGREDIENTS:
To make the burrito:
4 turkey bacon medallions, diced
4 chicken sausages, skin removed
5 eggs
5 egg whites
Handful of baby spinach
4 white tortillas, soft
Salt and pepper, to taste
Low calorie oil spray
To make the Creamy Avocado Sauce:
180g 2% fat or less Greek yoghurt / SKYR
½ avocado
½ lime, juiced
1 tsp garlic granules
1 tsp oregano
100ml water
METHOD:
Add all of the sauce ingredients to a blender and blitz until smooth. Place in the fridge to cool until ready to serve.
Heat a frying pan with a few sprays of low-calorie oil spray.
Add diced turkey bacon and fry off for 3-4 minutes until crispy, remove and set aside.
Add chicken sausages to the pan and break up using a spatula, fry off for 4-5 minutes until cooked through.
Whisk together eggs and egg whites in a bowl.
Heat a frying pan with low calorie oil spray, on a low heat. Add eggs and gently cook and scramble until cooked and fluffy. Season to taste.
Add sauce, spinach, bacon, sausage and eggs to a tortilla then roll and toast them.
Leave to cool then wrap in tin foil.
Food prep tip – make 3-4 portions burritos. Leave to cool completely before refrigerating. Reheat in microwave or air fryer for a freshly baked taste. Will keep in the fridge for 3-4 days.
