Pancake Traybake Recipe

Protein pancakes are a tasty, fun way to start the day, but what’s better than protein pancakes? A traybake of them that are already prepared and ready to eat!

Made with vanilla, protein powder, oats, almond butter, bananas, and strawberries, these pancakes are bursting with flavour and all you need as the perfect accompaniment is a drizzle of 0% Greek yoghurt.

This traybake recipe really is the perfect meal prep option for when you’re wanting a healthy and balanced sweet treat.

Prep time: 10 mins

Cook time: 15 mins

INGREDIENTS:

Pancake base:

  • 300ml semi skimmed milk
  • 2 eggs
  • 1 tsp vanilla extract
  • 150g self-raising flour
  • 50g protein powder (chocolate or vanilla work well)
  • 60g oats
  • 1 tsp baking powder

Toppings:

  • 1 large banana, peeled and sliced
  • 6 strawberries, sliced
  • 4 tsp almond butter

To serve:

  • 100g 0% fat Greek yoghurt, per portion

METHOD

  1. Preheat oven to 180c.

  2. Line a medium sized baking tray with baking paper.

  3. To a mixing bowl add milk, eggs and vanilla extract and whisk together.

  4. Sift in flour, protein powder and baking powder then add oats and combine.

  5. Pour batter into the lined baking tray then top with banana, strawberries and small dollops of almond butter.

  6. Using a skewer or fork you can make some swirls with the almond butter for decoration.

  7. Place in the oven for 12 minutes until cooked through, but still nice and fluffy.

  8. Serve with some Greek yoghurt and enjoy.

For an easy food prep store in an airtight container for 4-5 days, eat cold or pop in the microwave for 15-20 seconds for that freshly cooked feel.

Toppings can be changed to your liking and to keep food prep fun!
