Quick Butterbean Shakshuka Recipe

Shakshuka is not only a healthy, balanced meal that helps you stay on track with your health fitness goals, but it's super quick to cook, making it a perfect mid-week choice!

Plus, it’s a super versatile dish - you can use a variety of vegetables, herbs, and spices to make it your own or use up leftover veggies or staples you’ve got in your cupboard.

Feel free to get creative by adding extra greens, beans, or even a little sprinkle of cheese.

The beauty of Shakshuka is that it can easily be changed to suit whatever flavours you’re feeling, making every plate uniquely yours!

Serves: 2

Prep time: 5 mins

Cook time: 15 mins

INGREDIENTS:

  • 1 onion, diced
  • 2 garlic cloves, crushed
  • 1 green pepper, diced
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1/2 tsp ground cumin
  • ½ tsp chilli flakes
  • 1 x 400g tin of chopped tomatoes
  • 1 x 200g tin of butter beans, drained
  • 4 eggs
  • Low calorie spray
  • Salt and pepper, to taste

METHOD:

  1. Heat low calorie oil spray in a large, deep pan.

  2. Add onions and sauté until soft.

  3. Add garlic and green pepper and fry off for a further minute.

  4. Sprinkle over spices and cook until softened.

  5. Next add the chopped tomatoes and butterbeans to the pan with 50ml water - cover and simmer for 6-8 minutes on a medium heat.

  6. Add 50ml more water and stir.

  7. Using a wooden spoon make 4 wells in the mixture, gently crack an egg into each one.

  8. Reduce the heat and cover the pan. Leave to cook until the egg whites are set.

  9. Once cooked, add parsley and coriander and then serve with a toasted pitta.

Food prep tip – make 2 portions for an easy food prep. Leave to cool completely before refrigerating. Reheat in microwave for a freshly cooked taste. Will keep in the fridge for 2 days.
