Saucy Bean Baked Eggs Recipe

INGREDIENTS:

To make the Saucy Bean Baked Eggs you will need:

  • 2 x 400g tins chopped tomatoes

  • 1 x 400g tin mixed beans, drained

  • 200g baby spinach

  • 4 eggs

  • 50g thinly sliced smoked ham, sliced

  • 2 slices of crusty wholemeal bread, toasted

  • Salt and pepper, to taste

METHOD:

  1. Add chopped tomatoes and mixed beans to a shallow frying pan and simmer for 10 minutes until the tomato sauce begins to thicken.

  2. Add spinach and stir through, leaving to simmer for 5 minutes until wilted. Pre-heat grill to medium.

  3. Make 4 indentations using a spoon in the tomato sauce and crack one egg into each. Sprinkle over ham and season with salt and pepper.

  4. Place under the grill for 5-6 minutes until the egg whites are cooked through and the yolks are slightly runny. Serve with some warm crusty bread and enjoy.

Food prep tip – make extra or box up any leftovers and store in the fridge once cooled for up to 3 days.
