Sundried Tomato and Cream Cheese Chicken Recipe

Creamy, comforting flavours that taste indulgent aren’t necessarily what you might associate with a nutrient-rich, protein packed meal, but that’s where you’re going to be surprised!

This Sundried Tomato and Cream Cheese Chicken dish delivers 55g of protein per serving but only contains 399 calories.

It’s nourishing, comforting, and rich, but with an impressive amount of protein and paired with veggies, it’s the perfect meal for those looking to stay on track with their health goals but still enjoy satisfying meals.

Whether cooking an exciting dinner for others or doing your weekly meal-prep, this is a great recipe to add to your list, especially if you’re looking to add a bit of variety and pack that protein in.

Plus, easily done in either an Air fryer or the oven, it’s quick and easy to whip up!

INGREDIENTS:

For the chicken:

  • 2 chicken breasts

  • 2 tsp garlic granules

  • 2 tsp paprika

  • Salt and pepper, to taste

  • Low calorie oil spray

To make the filling:

  • 2 tbsp light cream cheese

  • 2 large sundried tomatoes, diced

  • 4 basil leaves, sliced

To serve:

  • 150g potato, cubed

  • 1 tsp paprika

  • 200g tenderstem broccoli

METHOD:

  1. Slice chicken breast down the middle to create a pocket.

  2. Season chicken breast with garlic, paprika, salt and pepper. Massage into the chicken.

  3. In a bowl, mix together the ingredients for the filling. Season to taste.

  4. Stuff chicken breast with the creamy sundried tomato mixture. Top tip – use toothpicks to secure, if needed.

  5. Add potatoes to a bowl and sprinkle in paprika, salt and pepper. Spray generously with low calorie oil spray and mix well.

  6. Add chicken and potatoes to the air fryer, spray with low calorie oil spray.

  7. Air fry at 200c for 18-20 minutes, turning potatoes half way, until everything is cooked through and potatoes are golden brown. Alternatively, add chicken and potatoes to a lined and greased baking tray and roast in the oven for 25-30 minutes.

  8. Drop tenderstem broccoli into a pan of boiling water for 3-4 minutes until cooked but still vibrant green, with a crunch.

  9. Serve together and enjoy.

Food prep tip – make 3-4 portions for an easy food prep. Leave to cool completely before refrigerating. Reheat in microwave or air fryer for a freshly cooked taste. Will keep in the fridge for 3-4 days.
